It makes a great topping on a bed of baby spinach, or mixed with feta cheese or as a base vegetable served under a salmon steak. I love it just on its own! Even better, it doesn't require any cooking.
Beetroot is incredibly beneficial and boosts your immune system, is packed with Vitamin C and Iron (amongst other things), contains seratonin which a mood booster and is good for your liver - to name a few. It really is a super food and is packed with anti oxidants - we should all be eating it as often as possible and feeding it to our families. Oh, and don't be surprised at the change in colour of your urine to a lovely shade of pink.
Ingredients
3 small or 2 large raw beetroots (peeled and quartered)
1 green apple
1 carrot (peeled)
1/2 a red onion
2 big handfuls of coriander
Lemon juice (approximately 2 Tsp)
salt and pepper to taste
1 tsp sugar or xylitol (if you want to keep this sugar free) - optional
Steps:
1. Chop and place beetroot on the blender.
2. The blended beetroot should look like this:
3. Blend the chopped apple
4. Add the coriander and blend
5. Carrots and onion too.
6. Remember your lemon juice, sugar and salt and pepper:
Your final salad could look like this (if you sprinkle with pine nuts and feta):
It really is delicious and lasts for days in the fridge, perfect to add to lunches for days on end. I have been making and eating it virtually every few days since Christmas and the novelty hasn't worn off yet!

DeleteOK. I actually hate canned beets, but have never had them fresh! I wonder if I might like them better that way. The other salad ingredients are some of my faves!
